Product Description
Del Maguey Pechuga starts with Minero mezcal that has been distilled twice. Seasonal fruit, spices and nuts go into the clay still for a third distillation, with a chicken breast suspended in the still. It is made at the end of the year, after the harvest, when wild mountain apples and plums are in season.
Florencio Carlos Sarmiento, Florencio Carlos Vasquez, Luis Carlos Vasquez and Luis Carlos Martinez make it from Espadín in Santa Catarina Minas. Its flavors include harvest fruit, spices, citrus, basil, lemon, clove and an ocean note. The mezcal is salty and soft, with a slight chicken taste.
