All-Wise is a Brooklyn meadery with a devoted following, and their Show Mead is the bottle to start with. “Show mead” is the purest expression of the style — made from nothing but honey, water and yeast, with no fruit or spice to hide behind — so the honey itself has to carry the show. Here that’s unfiltered New York honey, fermented and then rested on oak.
The result is a golden honey wine that’s smooth and gently sweet rather than syrupy: light honey and floral aromas, a whisper of citrus and mint, and a soft, woody note from the oak that keeps the finish clean. If you’ve never tried mead, this is a friendly, easy way in; if you already love it, it’s a beautifully made example.
Serve it chilled or at room temperature — on its own as an aperitif, or alongside sharp cheeses, charcuterie or roast pork. 750ml.
