Ovum ‘Pink Salt’ Rosé is not your typical blush wine, it’s a carefully crafted expression of place, terroir, and traditional winemaking philosophy. Hailing from the dramatic slopes of Oregon’s Columbia Gorge, the wine comes from certified-organic Cabernet Sauvignon vines rooted in ancient volcanic ash and mineral-rich soils. These vineyards draw on the region’s distinctive geology, lending a subtle saline edge and a naturally vibrant structure that makes this rosé stand out.
A major part of the wine’s character comes from Ovum’s low-intervention approach. Grapes are destemmed, given a brief soak on the skins, then pressed and fermented with native yeasts. The wine is neither fined nor filtered, and undergoes full malolactic fermentation with only a minimal addition of sulfur. This hands-off technique allows the fruit’s purity to shine, preserving both texture and authenticity without manipulation.
In the glass, the wine shows a delicate pale-pink hue, but the aromas are surprisingly expressive. Bright cherry, fresh currant, and green fig rise immediately, supported by faint floral and herbal undertones. There is a richness to the aroma that nods toward red-wine depth while still keeping true to the refreshing profile of a rosé.
