Hakutsuru Ukiyo-E Daiginjo Sake is a premium expression from one of Japan’s most respected breweries, Hakutsuru, founded in 1743 in the famed Nada/Hyogo region. This area is known for its ideal brewing water and long sake heritage, and Hakutsuru has become one of Japan’s leading producers by combining tradition with advanced research into rice, yeast, and water.
Classified as a Daiginjo, this sake is brewed with Japanese domestic rice such as Yamada Nishiki or Hakutsuru Nishiki, carefully polished to at least 50% of its original size. That high polishing level removes outer layers of the grain, allowing the brewers to coax out a delicate, precise flavor profile. With an ABV of 15.5%, a sake meter value of +3, and measured acidity of 1.3, Ukiyo-E Daiginjo falls on the light and slightly dry side, delivering plenty of flavor without heaviness.
