Dr Diablito Rojo Extra Añejo is the pinnacle of the 123 Organic Tequila range, a statement bottle designed for drinkers who seek rarity, craftsmanship, and genuine depth in their tequila. Built on the philosophy of terroir-driven spirits, every element of this release is intentional, from the volcanic soil where the agave grows to the choice of barrels that shape its final character.
The journey begins in Jalisco, where 100% Blue Weber agave is cultivated organically on a single estate at high elevation. The minerals in the red volcanic earth and the cooler mountain climate slow the plant’s growth, concentrating sugars and delivering an agave core that remains evident even after years in oak. This foundation is key: you taste not just barrel, but place.
Dr Diablito Rojo then spends at least seven years resting in French white oak Limousin barrels. This long maturation softens the spirit, building structure, creaminess, and warm notes of vanilla and toasted wood. To finish, it is transferred for an additional six months into French Limousin casks that previously held one of Napa Valley’s leading Cabernet Sauvignons. That final step infuses the tequila with a subtle wine influence, hints of red fruits, cocoa, and gentle tannin, that you can both see in its deep amber-red hue and taste in every sip.
In the glass, expect aromas of cooked agave wrapped in cabernet, red berries, and sweet, lightly charred oak. The palate follows with caramelized roasted agave, dried cherries, semi-sweet chocolate, and a touch of leather, all carried on a velvety mouthfeel.
